IMO this is a bug. Let me try to describe it.

I have a image file (let's say .png file). I could open this image file
using image viewer to view it or using GIMP to edit it. I want default
application to be image viewer, so that whenever I double-click on it,
image viewer shows the image.

Sometimes, for editing, I right click on image file (on desktop or in
file manager) to bring up context menu. In this context menu, I select
Open With > GIMP to edit file. At this point .png file gets associated
with GIMP. Any double-click operation on .png file will bring up GIMP.
Which is very annoying.

I think, Open With > ... should not change default association. Or
better yet there could be preference check-box some where in File
(Nautilus?) Manager's preferences. In fact, I was looking into
preferences hoping that there must be some setting controlling this
behavior.
