The screenshot you've attached looks normal to me and is a result of the fix for bug 284289. You can't change the settings of the automatically generated profiles such as "Auto eth0".
If you want to change your network settings, you need to create a new connection from nm-connection-editor instead of trying to edit Auto eth0.
