We simply don't have enough space on the CDs to have both amd64 and i386 
packages needed to build an i386 chroot on an amd64 system.
As mentioned by Jordan, what you should do is install your server as amd64 then 
run ltsp-build-client with the --arch i386 parameter, it'll then get all the 
packages from internet and build the chroot (we can't rely on internet during 
the install process so it's not an option for the installer).
