SOLVED!
I found the solution in a forum: you need to install the package "poppler-data"
(description: PDF rendering library -- CJK fonts support)
CJK stands for Chinese-Japanese-Korean

Shouldn't evince inform the user that cjk-support is not installed, and
maybe even offer to install poppler-data for the user (like adobe reader
does)?
