A simple workaround without manual editing of /etc/X11/xorg.conf:
temporary arrange both monitors in a diagonal way in Gnome Screen Resolution. 
This forces Gnome to adjust Virtual resolution to a higher value. Gnome will 
ask you to log out and after login, all resolutions of the external monitor 
will be visible.
