I have a hint about this issue. gnome-system-monitor is crashing only when opening as user the "Filesystems" tab. Change the following key in gconf and you'll be able to use at least the other tabs: /apps/procman/current_tab. It is set to 3 per default (the "Filesystems" tab). Change it to some value between 0 and 2 to open one of the three other tabs per default and it won't crash any more unless you open the "Filesystems" tab manually.
