some progress, I changed the plugin for xmms to esd and now thats working :-)
As for totem, looks like a problem with totem-xine

When I installed totem-gstreamer sound worked on on the client. To be
certain I tried totem-xine again and the sound went back to the server.
So it looks like totem-xine has a problem with ESPEAKER.
There is already a bug filed for sound on gcompris:
bug report 69074
I left a note there to confirm the problem.
