When installing Ubuntu in an environment where there are no other system installed, grub just makes a 3 second timeout an then boot Ubuntu. If you want to get the list of all other systems, you need to press ESC in those 3 seconds or you could comment out the line with 'hiddenmenu' in /boot/grub/menu.lst
