Found it, and it was in kboot installer. /etc/kboot.msg is created in postint, using these lines:
cat >"$etc/kboot.msg" <<EOF Ubuntu PS3 KBoot Loader. Hit enter to boot the default system. You can also use the shell by typing 'sh'. Exiting the shell returns to the kboot prompt. EOF So we either directly replace the XMB explanation in this section, or we handle this differently (maybe so that it becomes easier to find / update and to internationalize).
