I don't think patching the applications' desktop file is a good idea, it's rather intrusive and doesn't depend on our sole will (especially for system-config-printer). What can be done is hiding them in the xubuntu-specific menu file shipped in xubuntu-default-settings, so people who still want all these icons in their menu can use a custom menu file and be happy...
