Matt, thank you!! This would be a huge feature that Windows does not, and probably will not ever have: the easy and straightforward ability to control all one's preferred applications in one place.
If I can throw in 2 more cents, you might also want to consider making "Preferred Applications" be a centralized location to edit all file type "associations". In other words, for all files of type, say, .doc, OpenOffice Writer could be specified as the application to open that file type. Right now, to accomplish this, one must have, for example, a .doc file in nautilus, then right click it, choose properties, then choose the "Open with" tab, then pick the application. This current approach is not centralized, as one must track down and right click one file of every type.
