I used the (pre-release) x86 Jaunty Live CD from April 11, 2009 to install and (with the same hardware) the bug is still there. I decided to boot back to the Live CD to see what values were in /etc/usplash.conf that worked; that was a bit of a surprise for me: other than the commented out parts, it was empty! :)
So after rebooting into my installed system, I took out the xres and yres lines (which were the same as my last post) and as per the first post ran: sudo update-initramfs -u and that gets the splash to display.
