The images I've uploaded were scanned with gscan2pdf, which I've configured to run unpaper. If I scan things from the command line, there's still distortion, so unpaper is not relevant.
scanadf doesn't give me a setting for bit depth. It gives me --mode, with options color, gray, and lineart.
