Please attach the dmesg from where this stops working (attach via web
interface, do not paste into comments).
I'm a little skeptical that it stops working. The fstab entry makes me
wonder if for some reason it's maybe getting detected as sdb later on,
which would keep it from showing up.
Try this: "sudo vol_id /dev/sda1"
Take the ID_FS_UUID= value, and change your fstab line to look like:
UUID=XXX /media/usb auto user,noauto,iocharset=iso8859-2,rw 0 0
Where XXX is the UUID you get from vol_id.
