Public bug reported:

With the exception of your browser, email client and terminal, there is
no obvious way to set preferred applications in Gnome (in Edgy at
least).

I seem to remember having been able to work around this by right-
clicking on a file, selecting "open with..." and then opting to make
your choice permanent, but if that was the case once, it certainly
doesn't work any more.

What does work is to right-click on a file, choose "properties" and go
to the "open with" tab, but this was far from obvious to me.

A related problem is that you can't easily choose how to handle internet
protocols. The example I have in mind is rtsp, which appears to be
handled by default in Totem. To get my browser to choose Realplayer to
open an rtsp stream I had to edit its prefs.js in a text editor.
