Thank you for your bug report, there is a similar request on
http://bugzilla.gnome.org/show_bug.cgi?id=509909 where upstream replied

"gtk-print-preview-command is a setting so that desktop environments can set it
to something suitable. evince is not hardcoded in GTK+. You can even set that
setting in your gtkrc file."

closing the distribution task now since upstream consider it not a bug
and you can configure it easily
