OK, I've also found something out about the pid problem !!! In fact it seems that the init script is managing the pid file, and the application also... It also the reason why the server often complains about missing pid file when trying to stop it or restart...
The only this is to uncomment the initialisation from the pid file variable in the configuration file /etc/openerp-server.conf !
