I managed to correct the issue by adding the following line to the
xorg.conf file as follows:

Section "Device"
     Identifier "Configured Video Device"
     Driver "ati"
     Option             "UseFBDev"              "true"
EndSection


The last line ("option") was already in there. I have no idea what it does but 
I left it there.
I now have a full range of video resolutions available in the Display 
preferences.

Since I now have to manually tell it which driver to use, should I put
"ati" there or "radeon" ?
