I have just solved this problem (at least in my computer, other users may try this out).
It seems it was a problem with Tracker. I just killed the tracker- indexer and trackerd processes and the file chooser dialog was working as fast as usual again. I ended up uninstalling Tracker. This solution was found in an older bug report (bug #229539). I think this bug is a duplicate of that one. I think Tracker is not installed by default in Jaunty, but it was in Hardy, so maybe those who are using Hardy or upgraded to Jaunty by patching Hardy or those who (like me) installed Tracker manually may found this problem.
