I had this problem with the latest open office 3.0.1 I tried for an hour to get Impress to display the correct resolution on the projector output. It always appeared cropped. Finally, I realized that I have to start openoffice on the virtual screen that is the lowest resolution, then when I go fullscreen, it appears correctly out of the projector.
I think OpenOffice should detect the monitor being used for the presentation (lowest), then automatically change the resolution to match it.
