Having the same problem (i.e. Evolution started instead of prefered emailer set in Ubuntu, i.e. Thunderbird), I did some tests with xdg- email replacing sensible-ooomua as the OOo emailer (in the option menu), without any success. OOo gives me an error message saying that it can't find a valid program to perform the operation. xdg-email works well when issued in a terminal though... Maybe some parameters must be used with xdg-email to make it work in OOo...
