This just doestn't make any sense. update-grub never looks by default in
/usr/share/images/grub
that doestn't exist in Ubuntu or Debian.
So it seems to me you modified it or some file in /etc/grub.d so that that path
gets used somehow.
Purge the grub-pc and grub-common package and reinstall. It should be gone if
not check that you don't have any custom file in /etc/grub.d
