This really is not a fix, just a workaround. I use Evolution all the time and it is in my tray right now. The application to do this is called alltray. It can be downloaded by doing 'sudo aptitude install alltray' . Then if you go to applications>acessories>AllTray, it will ask you what application you want to put in the tray. It will also show a OSD message when you get a new message.
