This is not a problem in gedit but in the shared-mime-info. I found the
following magic rule for graphiz dot files:

<match value="graph " type="string" offset="0:256"/>

Which nicely matches "... paragraph ". Please file a bug against
shared-mime-info (http://freedesktop.org/wiki/Software/shared-mime-info)
