the problem with your longer list of directories is that not even the
empty directories will be created in the squashfs. tmp, dev, proc and
var need to exist as mountpoints for essential services.

it would be good to have a simple --exclude-dirs option for ltsp-update-
image for cases like yours, but it will not be straightforward to write
i assume since the check mechanisms we would need in place to make sure
all essential directory trees are there will be rather complex.
