After posting here I decided it was about time I put some effort into sorting this. First step was to read the alsa config docs, which showed there is another mac hardware option > model=intel-mac-auto
Updated this into my modprobe.d file (which now reads: options snd-hda-intel position_fix=2 probe_mask=1 model=intel-mac-auto), and rebooted. Sound now seems to be fixed !? Have done 3 reboots and system has suspended another 3 or so times and the static hasn't returned.
