Your configuration file its a pretty standard one, I can see nothing that would
cause a recurrent crash (as a matter of fact I can use it with no problem).
Can you try to manually obtain a backtrace (https://wiki.ubuntu.com/Backtrace)?
This could give us some clues.
The apport message seems to indicate that there was an assertion failure,
perhaps running conky from the command line with -D and checking what is
printed to stdout could also be helpful.
