runs
gdb empathy
then, at the gdb's prompt, type "run".

It will launch Empathy, quite slower than normal. After reproducing the crash, 
you type "bt" in gdb
That would produce the trace.

Don't forget to install the *-dbg package in order to produce the
correct backtrace. As far as Empathy is concerned, my personal list is

libtelepathy-glib0-dbg libtelepathy-farsight0-dbg telepathy-mission-
control-5-dbg telepathy-gabble-dbg libgstfarsight0.10-dbg
libempathy30-dbgsym libempathy-gtk28-dbgsym empathy-dbgsym

for the latter three, you need the following repository :
deb http://ddebs.ubuntu.com/ karmic main restricted universe multiverse

So now, you are ready to produce super backtrace :)
