Same problem here, nautilus treats every file type as a text file. But, it's not only nautilus is at fault. Using a terminal to open a pdf file with evince gives the error message:
File type plain text document (text/plain) is not supported. However, using eog from a terminal to open a png file works normally, although the same file can't be opened through nautllus.
