My first goal when trying sound-converter was to re-encode audio files. Some of them are podcasts from radios and in this case I consider predefined preferences of sound-converter not really appropriated in the task.
Initially I wrote this wish report mentioning also that an interface to create/modify GNOME audio profile really lacks. gstreamer pilpelines are very difficult to understand and handle. But I considered that it was not the place for it. So let me say now that I completely agree with you on this point.
