In my case, the command proposed by Alkis Georgopoulos gconftool-2 --type list --list-type string --set /desktop/gnome/peripherals/keyboard/kbd/layouts '[us,it]'
fixes the problem for the current session but the problem appears again after reboot. I can also fix the problem for the current session deleting the USA layout in the keyboard preferences.
