I think the suggestion in the original report is valid, but I don't feel
it is something we should document.  The panel UI seems to change every
release, and trying to explain in text how to find certain icons in the
panel can be an imperfect process.  In this case we could say something
along the lines of "Find the envelope icon in the upper taskbar by the
clock, click it, and choose Evolution Mail from the dropdown."  However,
that is rather wordy, when we could just keep "Start Evolution by
pressing Applications->Internet->Evolution Mail."

The latter is more reliable as it is (mostly) independent of the user's
UI preferences.  Ryan's point about being able to customize the menus is
also valid, but is a more involved procedure than adding/removing
applets.  Finally, the Applications menu is more like using the Start
menu in Windows, and this document is geared toward users switching from
Windows - this might make the new environment feel a little more
friendly to new users making the switch.
