As a workaround you can just install python-eggtrayicon package. Actually in Gajim README file (http://hg.gajim.org/gajim/raw- file/1001e93ec906/README.html) in "Optional Runtime Requirements" one can read: "GnomePythonExtras 2.10 or above (aka gnome-python-desktop) so you can avoid compiling trayicon and gtkspell". So it seems that gajim package in Ubuntu (Jaunty and Karmic) suggests python-gnome2-extras just for two packages that python-gnome2-extras depends on: python-gtkspell and python-eggtrayicon.
