To my opinion this is a mayor problem in Ooo. You can alter the behavior of the shortcuts in eg. /usr/lib/openoffice/basis3.1/share/registry/res/es/org/openoffice/Office/Accelerators.xcu.
Ctrl+S (Subrayar) is assigned to underline and so Ctrl+S underlines the text, but you can't prevent (the buildin?)
