Binary package hint: thunderbird
In short: The setting to display plain text messages in a proportional
(variable width) font doesn't affect new messages being composed.
More details:
I have configured my e-mail account in Thunderbird to compose messages in plain
text. There is an option (Edit -> Preferences -> Display -> Formatting) to
choose how plain text messages are displayed: in a proportional or in a
monospaced (fixed width) font. I have chosen proportional. This setting does
affect how received messages are displayed, but when composing a new message,
the font is always monospaced.
(There is a somewhat ugly workaround for this: In the "Formatting ->
Fonts..." menu, it is possible to select a proportional font as the
"Monospace" font. However, I don't think this is a good solution.)
