Some suggestions:

When you ssh into the install, try starting HAL manually:
sudo service hal restart

You should be able to boot to recovery mode (using GRUB menu) and use the root 
prompt (with network) option. From there you can create/modify your 
/etc/X11/xorg.conf to look like the attached sample, which uses the old-style 
keyboard/mouse driver instead of trying to detect them with HAL.
I forget if the packages are installed by default, but you'll need them for the 
above suggestion:
sudo apt-get install xserver-xorg-input-mouse xserver-xorg-input-kbd
