Chalk this one up to user ineptitude! Spent a part of the day 
yesterday installing the latest version on NVidia dirver and tools 
for Linux. Once that was done and I could actually control my screen 
resolution - Evolution was all readable.

Not sure what/where the issue I had was coming from. Most of the 
other applications that I ran sized to fit the available real estate. 
Evolution did not - it does all right with the monitors native 
1920x1200 and a capable driver; so not an issue here.
