@Paul: After a brief discussion on #ubuntu+1 I learned that the audio mixer applet has been recently merged into the general indicator applet (the applet that looks like an envelop). First, check that you have indicator-sound installed. Then ensure you have the indicator applet in your gnome-panel. Then check for the audio mixer in there.
