Update:
Yesterday shutdown, boot today, nm-applet appears.
ps -eaf | grep nm-applet
1000      1671  1490  0 20:53 ?        00:00:00 nm-applet --sm-disable
1000      2021  1914  0 21:03 pts/0    00:00:00 grep --color=auto nm-applet

Have tried solution #2 (from ubuntugeek) and seems to work. Will report back in 
case it'll vanish again in spite of the change.
