I disagree. Quoting Jimmac[1] (talking about notification icons) "I suggest the icons look different to regular application launchers or applets since they behave differently and their primary purpose is to inform. Having simplistic, greyscale icons would work quite well I would say."
The show desktop applet and trash applet have a different purpose, the fist one is a toogle button to change open windows visibility, the second one represents a place (trash://). Making all panel icons grayscale (or B/W) is overdoing (and maybe a little nonsense).
