If you want to reuse the ubuntu-logo theme with a different logo, it
should be sufficient to depend on plymouth-theme-ubuntu-logo and ship a
.plymouth config that sets a different ImageDir while reusing the
ScriptFile from ubuntu-logo.
Being able to override /lib/plymouth/ubuntu-logo.png is only of use for
*other* themes - that's not even the logo that the ubuntu-logo theme
uses...
