I have a somewhat similar problem ( intermittent stuttering audio, then no sound at all ) with an ATI card running the latest beta of Ubuntu 10.04 as of today. I went into the PulseAudio volume control and disabled the HDMI audio device for my ATI card ( Radeon HD 4670 ). I also made sure the my Audio was set to Analog Audio only.
I don't use HDMI even though my video card has HDMI support. I don't know whether this could be a problem with the open source ati driver. I previously used the fglrx driver but lost that choice when I upraded to Lucid from Ubuntu 9.10.
