xen-tools currently bases sources.lists partially on what the Dom0 has.
--dist should allow to specify things like security/volatile as well as
main/testing/unstable/backports/universe/restricted/multiverse/etc
I'll care about it. Possibly not in the upcoming release but in a later
release.
