It's almost time for the next release and this still has not been fixed in Karmic. A work around here...
After creating a hidden network, you find that you cannot connect automatically or manually since the hidden wifi network you created has a greyed out connect button. Try clicking network manager and then select connect to hidden wireless network and create the wifi network from here. This sometimes requires a reboot since the connection string will become corrupt. Also, you may also need to change from the default ad-hoc to infrastructure and also change to automatic dns under settings.
