The debug symbols for the xserver binary (which shows up in a backtrace as /usr/bin/X but is not /usr/bin/X because that is a security wrapper around it) are in xserver-xorg-core-dbg. Are you trying to use -dbgsym? There is a problem currently with pkg-create-dbgsym where it isn't creating -dbgsym packages for xserver-xorg-core properly, you'll notice the package is 8KB here - http://ddebs.ubuntu.com/pool/main/x/xorg- server/
