You realize what you're actually asking for is the old GUI? :-)
This option is not provided on purpose. If you really need it, change
the UID after creating the user, and that should work. If that doesn't,
when we should fix bugs there.
But more generally, you shouldn't need to tweak those settings. If you
want a user to be hidden from GDM, then GDM itself should provide that
option. Setting the UID below 1000 is just a hack.
