Sorry to keep this post alive but why not just remove the screensaver you don't want from the list of screensavers in the /usr/lib/xscreensaver path? Although this might not be the correct way it seems like it has worked for me. I've removed everyone but fuzzyflakes and this is the only one that shows up in the gnome- screensaver preferences. I've tested by choosing random and none of the other ones I've removed are working. The only one that works is fuzzyflakes on the random option. There are 4 or so other ones that are directly related to gnome that didn't come with xscreensaver but these I believe can be deleted in the usr/lib/gnome-screensaver path. Anyhow, this is accomplished in ubuntu 10.04 lucid. I haven't checked previous ubuntu releases.
