Found a workaround! I used the CUPS http interface:

"http://[ip address of host with printer to delete or
modify]:631/printers/?" l needed my username and password for the host.
(I can see all the printers available on my network, using
http://localhost:631/printers/?)

I selected the printer I had taken offline and chose "delete" under the
Administration drop-down menu on the printer-specific page that came up.

It is now gone from my system-config-printer GUI.
