I have the same problem. I am running lucid and my system is up to date. After hibernating I still get a plain coldboot. Installed "hibernate" and it *does* work, but opening a terminal and doing a "sudo hibernate --force" doesn't seem to be a *real world* solution. Take it, that's for geeks, and even those really didn't like it.
If there were no menu option to hibernate, it wouldn't be that embarrassing. But it's there, so I (and *all* the others) expect it to work. Again, running "sudo apt-get install hibernate" and opening a terminal every time you want to hibernate your system, then do a "sudo hibernate --force" *is* working for me.
