This is, as far as I understand this bug, by no means a Wishlist item. Consider this (my) set-up: I have a color laser printer but set the default print out to be greayscale in CUPS. This works great. But the printing dialogue of OpenOffice does not give me the neccessary options to re-activate color, nor to change the paper type, etc. There is the option in the Properties section of the print dialogoe to alter the color setting from print driver default to color but this has no effect.
I use Kubuntu and changing the color setting in the print dialogue works there.
